1 Red Pepper, finely chopped |
1 Yellow Pepper, finely chopped |
1 Onion, finely chopped |
1 Jalapeno Pepper, finely chopped |
2 Stalks Celery, finely chopped |
Vegetable Oil, as needed |
2 Garlic Cloves, finely chopped |
400 g Corn, drained |
800 g Chopped Tomatoes |
400 g Pinto Beans, drained |
400 g Black Eyed Beans, drained |
400 g Red Kidney Beans, drained |
2 tbsp Chilli Powder |
1 tsp Salt |
1 tsp Coriander |
1 tsp Cumin |
Black Pepper, to taste |
Method |
In large pot sauté all vegetables excluding the garlic in oil until the onions start to look transparent. |
Add garlic and sauté together for 2 minutes. |
Add all remaining ingredients and let simmer on the stove for 1 hour stirring regularly. |
Server with boiled rice. |
