Three Bean Veggie Chilli

SpiceTheWorld meat free and tasty Chilli.

1 red bell pepper chopped
1 yellow bell pepper chopped
1 small white onion chopped
1 Jalapeno Pepper
2 stalks celery sliced
Vegetable oil as needed
2 cloves garlic crushed
500g Tin corn drained
1kg Tin crushed tomatoes
500g Tin pinto beans undrained
500g Tin black beans undrained
400g Tin red kidney beans undrained
2 tablespoons chilli powder
1 teaspoon salt
1 teaspoon dried cilantro
1 teaspoon cumin
Black pepper to taste
In large pot sauté all vegetables excluding the garlic in oil until the onions start to look transparent.
Add garlic and sauté together for 2 minutes.
Add all remaining ingredients and let simmer on the stove for 1 hour stirring regularly.
Server with boiled rice.
