Vegan safe Vegetarian

1 Red Pepper, finely chopped
1 Yellow Pepper, finely chopped
1 Onion, finely chopped
1 Jalapeno Pepper
2 Stalks Celery, finely chopped
Vegetable Oil, as needed
2 Garlic Cloves, crushed
400 Gram Corn, drained
800 Gram Chopped Tomatoes, chopped
400 Gram Pinto Beans, drained
400 Gram Black Eyed Beans, drained
400 Gram Red Kidney Beans, drained
2 Tablespoons Chilli Powder
1 Teaspoon Salt
1 Teaspoon Coriander
1 Teaspoon Cumin
Black Pepper, to taste
In large pot sauté all vegetables excluding the garlic in oil until the onions start to look transparent.
Add garlic and sauté together for 2 minutes.
Add all remaining ingredients and let simmer on the stove for 1 hour stirring regularly.
Server with boiled rice.
