Zucchini Fritters
These vegan zucchini fritters are tasty, easy to make and gluten-free

Ingredients |
2 medium zucchini - shredded , salted and juices drained |
1 teaspoon salt |
120g chickpea flour |
30g rice flour |
1 small onion finely chopped |
2 garlic cloves minced |
1/2 teaspoon cayenne pepper |
1/4 teaspoon ground black pepper |
Oive Oil |
Fresh chives or parsley for garnish |
Method |
Place grated zucchini in a colander over the sink |
Add salt and gently toss to combine |
Allow to rest for 10 minutes. |
Using a clean dish towel drain the zucchini well |
In a large bowl, combine all other ingredients. |
Next add the shredded zucchini |
Mix well and form a dough |
Divide mixture into six equal parts |
Make round balls and flatten them like small pancakes |
Place the prepared fritters on the greased baking sheet and bake at preheated 375 degrees Fahrenheit |
