Jerk Cauliflower

Steak gets a spicy makeover with the help of paprika and SpiceTheWorld

Ingredients
1 Cauliflower, broken it to bite size florets
2 Tablespoon Jerk Seasoning
2 Sunflower Oil
3 Onion, finely chopped
Mayonnaise
Chives, to serve
Method
Put the florets in a bowl with the oil and then Spread out on a baking tray and put in an oven at 180c for 20 mins.
They should soften and brown slightly.
Carefully transfer the cauliflower to a bowl and add as much jerk seasoning as it takes to give your cauliflower a good coating.
Put the cauliflower back on the baking tray and give it another 10 mins in the oven.
Once nicely soft and browned, transfer to serving dish, top with Spring onions and a drizzle of vegan mayo.
