Ingredients |
400 Gram Red Kidney Beans |
400 Millilitre Coconut Milk |
1 Onion, finely chopped |
1 Garlic, finely chopped |
½ Teaspoon Dried Thyme |
1 Teaspoon Salt |
2 Cups Water |
450 Gram Basmati Rice, washed |
Method |
Add the kidney beans (with liquid) and the Coconut Milk to a large saucepan |
Now add with the onion, garlic, thyme & salt. |
Add 2 cups of cold water. |
Stir through and then bring to the boil. |
Meanwhile wash the rice in a sieve until the water runs clear. |
Once the Coconut Milk has reached boiling point add the rice |
Then stir and reduce the heat. |
Now simmer until the rice is cooked. |
Drain if required and serve. |
