Madras Curry Paste

Ingredients
2 Teaspoon Black Pepper
1 Tablespoon Chilli Powder
½ Teaspoon Ground Cinnamon
2 Teaspoon Garam Masala
2 Teaspoon Turmeric
8 Tablespoons Coriander
2 Teaspoon Mustard Seeds
4 Tablespoons Ground Cumin
3 Cloves, crushed
3 Cm Ginger, grated
125 Millilitre Vehegar
75 Millilitre Vegetable Oil
Method
Put all ingredients except for the vinegar and oil into a mixing bowl.
Mix in well.
Now stir in the vinegar and mix to a smooth paste.
Heat the oil in a saucepan
Stir in the mixture over low heat.
Stir until the mixture boils and oil begins to separate from the spices.
Remove saucepan from heat and allow the paste to cool.
Store in airtight jar and add to curries as required.
