| Madras Curry Paste |

| Ingredients |
| 2 tsp Black Pepper |
| 1 tbsp Chilli Powder |
| ½ tsp Ground Cinnamon |
| 2 tsp Garam Masala |
| 2 tsp Turmeric |
| 8 tbsp Coriander |
| 2 tsp Mustard Seeds |
| 4 tbsp Ground Cumin |
| 3 Cloves, crushed |
| 3 cm Ginger, finely chopped |
| 125 ml Vinegar |
| 75 ml Vegetable Oil |

| Method |
| Put all ingredients except for the vinegar and oil into a mixing bowl. |
| Mix in well. |
| Now stir in the vinegar and mix to a smooth paste. |
| Heat the oil in a saucepan |
| Stir in the mixture over low heat. |
| Stir until the mixture boils and oil begins to separate from the spices. |
| Remove saucepan from heat and allow the paste to cool. |
| Store in airtight jar and add to curries as required. |
