|250 g Fresh Spinach
|250 g Cheddar Cheese
|1 tbsp Vegetable Oil
|3 Onions, finely chopped
|3 cm Ginger, finely chopped
|1 Tomato, finely chopped
|1.5 tsp Cumin Seeds
|½ tsp Turmeric
|1 tsp Chilli Powder
|1 tsp Nutmeg
|Salt, to taste
|Cook the spinach in a little water and then chop it up.
|Cut the cheese into 1cm cubes and fry a few pieces at a time in the oil.
|Next fry the chopped onions in the oil for 2 minutes.
|Add the ginger and turn heat to high.
|When the onions are golden reduce the heat and add the tomato
|Add the spices.
|Cover for a few minutes then add the spinach and salt
|Cover and simmer about 5 minutes to let spices penetrate.
|Add the cheese pieces mix and serve.
