Ingredients
100 g Gram Flour
½ tsp Chilli Powder
½ tsp Turmeric
½ tsp Cumin
½ tsp Baking Powder
Salt, to taste
25 g Fresh Coriander, finely chopped
2 Onions, thinly sliced
1 Green Chilli, finely chopped
Water, to mix
Vegetable Oil, for deep frying

Method
Soak the onions in cold water.
Sift the flour, chilli, turmeric, cumin, baking powder and salt into a large mixing bowl.
Add the chopped coriander, onions and chillies and mix well.
Preheat the deep fat fryer to 180C / 350F.
Gradually add enough water to the flour mixture to form a thick batter.
Drain the onion well then add to the batter and mix well.
Lower heaped tablespoons of the bhaji mixture into the hot oil, a few at a time
Cook for a few mins, turning once, until they are evenly browned and crisp
Drain on kitchen paper, sprinkle with a little salt and keep warm while you cook the rest.
