Onion Bhajii
The onion bhajii is a spicy Indian snack of which the main ingredient is fried onions

Ingredients |
100 g Gram Flour |
½ tsp Chilli Powder |
½ tsp Turmeric |
½ tsp Cumin |
½ tsp Baking Powder |
Salt, to taste |
25 g Fresh Coriander, finely chopped |
2 Onions, thinly sliced |
1 Green Chilli, finely chopped |
Water, to mix |
Vegetable Oil, for deep frying |
Method |
Soak the onions in cold water. |
Sift the flour, chilli, turmeric, cumin, baking powder and salt into a large mixing bowl. |
Add the chopped coriander, onions and chillies and mix well. |
Preheat the deep fat fryer to 180C / 350F. |
Gradually add enough water to the flour mixture to form a thick batter. |
Drain the onion well then add to the batter and mix well. |
Lower heaped tablespoons of the bhaji mixture into the hot oil, a few at a time |
Cook for a few mins, turning once, until they are evenly browned and crisp |
Drain on kitchen paper, sprinkle with a little salt and keep warm while you cook the rest. |
