Vegetable Curry

1 Tablespoon Vegetable Oil
1 Onion, finely chopped
2 Garlic Cloves, crushed
2.5 Tablespoons Curry Powder
2.5 Tablespoons Tomato Purée
400 Gram Chopped Tomatoes, chopped
300 Gram Frozen Mixed Vegetables
350 Millilitre Vegetable Stock
Salt, to taste
Black Pepper, to taste
Coriander, to garnish
Heat the oil in a pan over medium heat.
Sauté the onion and garlic until golden.
Stir in curry powder and tomato purée cook for 3 minutes.
Stir in tomatoes, mixed vegetables, stock, salt and pepper to taste.
Cook until vegetables are just done.
Adjust seasoning.
Sprinkle with fresh coriander prior to serving.
