Vegetable Curry |

Ingredients |
1 tbsp Vegetable Oil |
1 Onion, finely chopped |
2 Garlic Cloves, finely chopped |
2.5 tbsp Curry Powder |
2.5 tbsp Tomato Purée |
400 g Chopped Tomatoes |
300 g Frozen Mixed Vegetables |
350 ml Vegetable Stock |
Salt, to taste |
Black Pepper, to taste |
Coriander, to garnish |

Method |
Heat the oil in a pan over medium heat. |
Sauté the onion and garlic until golden. |
Stir in curry powder and tomato purée cook for 3 minutes. |
Stir in tomatoes, mixed vegetables, stock, salt and pepper to taste. |
Cook until vegetables are just done. |
Adjust seasoning. |
Sprinkle with fresh coriander prior to serving. |
