Vegetable Curry
A quick, healthy and comforting SpiceTheWorld fix after a long hard days work.

Ingredients
1 tbsp Vegetable Oil
1 Onion, finely chopped
2 Garlic Cloves, finely chopped
2.5 tbsp Curry Powder
2.5 tbsp Tomato Purée
400 g Chopped Tomatoes
300 g Frozen Mixed Vegetables
350 ml Vegetable Stock
Salt, to taste
Black Pepper, to taste
Coriander, to garnish
Method
Heat the oil in a pan over medium heat.
Sauté the onion and garlic until golden.
Stir in curry powder and tomato purée cook for 3 minutes.
Stir in tomatoes, mixed vegetables, stock, salt and pepper to taste.
Cook until vegetables are just done.
Adjust seasoning.
Sprinkle with fresh coriander prior to serving.
