Spinach and Cheese Curry
Very tasty meat free dish
Serves - 4-6 Heat 3 (1-5)

Ingredients
250 g Fresh Spinach
250 g Cheddar Cheese
1 tbsp Vegetable Oil
3 Onions, finely chopped
3 cm Ginger, finely chopped
1 Tomato, finely chopped
1.5 tsp Cumin Seeds
½ tsp Turmeric
1 tsp Chilli Powder
2 Cloves
1 tsp Nutmeg
Mace
Salt, to taste
Method
Cook the spinach in a little water and then chop it up.
Cut the cheese into 1cm cubes and fry a few pieces at a time in the oil.
Next fry the chopped onions in the oil for 2 minutes.
Add the ginger and turn heat to high.
When the onions are golden reduce the heat and add the tomato
Add the spices.
Cover for a few minutes then add the spinach and salt
Cover and simmer about 5 minutes to let spices penetrate.
Add the cheese pieces mix and serve.
