Spicy Sweet Potato Naga

Pre-heat your oven to 200c (400f)

Heat three tablespoons of olive oil in a large pan or wok.

Place the Sweet Potato in the oil and brown on both sides.

Set aside

Pour the remaining oil into an oven proof pan.

Add the onions and fry for about 15 minutes until they are soft and translucent.

Now add the garlic, ginger and the Nagas and fry for another minute.

Next add the tomatoes and mix well.

Now add the garam masala, curry powder and the Sweet Potato.

Next add enough water to cover the Potato.

Place in the oven for about 20 minutes or until the Potato is cooked.

Season with salt and pepper to taste.

Serve with plain rice and home-made bread.

6 Potatoes, peeled and cubed
3 tbsp Olive Oil
125 ml Olive Oil
4 Onions, finely chopped
6 Garlic Cloves, finely chopped
3 cm Ginger, grated
5 Tomatoes, finely chopped
4 Naga Chillies
1 tbsp Garam Masala
1 tbsp Curry Powder
Salt, to taste
