A great tasting, vegan dish

Ingredients |
Vegetable Oil |
1 Onion, finely sliced |
2 Teaspoon Turmeric |
2 Teaspoon Curry Powder |
1 Broccoli , sliced |
1 Red Pepper, sliced |
1 Coconut Milk |
4 Teaspoon Tomato Puree |
500 Millilitre Vegetable Stock |
250 Gram Fresh Tofu |
Method |
Add the oil to a pan and heat. |
Fry the onion until browning. |
Next add the turmeric and curry powder to the saucepan and fry for a further 3 minutes. |
Add all other vegetables and stir in. |
Now add the coconut milk, tomato puree and stock. |
Finally add the tofu. |
Now and cook until the vegetables are just cooked. |
Serve with plain rice. |
