| Tofu Curry |
| A great tasting, vegan dish |

| Ingredients |
| Vegetable Oil |
| 1 Onion, finely sliced |
| 2 tsp Turmeric |
| 2 tsp Curry Powder |
| 1 Broccoli Heads, broken into florets |
| 1 Red Pepper, sliced |
| 1 Coconut Milk |
| 500 ml Vegetable Stock |
| 250 g Pressed Tofu, cut into bite sized cubes |

| Method |
| Add the oil to a pan and heat. |
| Fry the onion until browning. |
| Next add the turmeric and curry powder to the saucepan and fry for a further 3 minutes. |
| Add all other vegetables and stir in. |
| Now add the coconut milk and stock. |
| Finally add the tofu. |
| Now and cook until the vegetables are just cooked. |
| Serve with plain rice. |
