Lemon Rice

A simple side dish but with a nice citrus flavour

Fry the rice gently for 3 minutes in the oil.

Add the garlic, grated lemon peel and pepper then cook for another minute.

Pour in the stock.

Bring to the boil and then simmer very slowly until all the liquid has been absorbed.

Stir very gently once or twice to avoid sticking.

Ingredients

225 g Basmati Rice, washed
2 tbsp Vegetable Oil
2 Garlic Cloves, finely chopped
1 Lemon, grated
½ tsp Black Pepper
500 ml Vegetable Stock
Coriander, to garnish
