Lemon Rice

A simple side dish but with a nice citrus flavour

225g basmati rice washed
2 Tablespoons Vegetable oil
2 Teaspoons crushed garlic
Grated peel from one lemon
1/2 Teaspoon freshly ground black pepper
500ml Chicken Stock
Coriander to garnish
Fry the rice gently for 3 minutes in the oil.
Add the garlic lemon peel and pepper then cook for another minute.
Pour in the chicken stock.
Bring to the boil and then simmer very slowly until all the liquid has been absorbed.
Stir very gently once or twice to avoid sticking.
