A simple side dish but with a nice citrus flavour

Ingredients |
225 Gram Basmati Rice, washed |
2 Tablespoons Vegetable Oil |
2 Teaspoon Garlic Clove, crushed |
Lemon, grated |
½ Teaspoon Black Pepper |
500 Millilitre Vegetable Stock |
Coriander, to garnish |
Method |
Fry the rice gently for 3 minutes in the oil. |
Add the garlic lemon peel and pepper then cook for another minute. |
Pour in the stock. |
Bring to the boil and then simmer very slowly until all the liquid has been absorbed. |
Stir very gently once or twice to avoid sticking. |
