Fish Curry

Serves 4-6 (Estimated) Rating 4 (1-5)

Prep Time 10 Minutes Cooking Time 20 Minutes

1 Onion finely sliced
Vegetable oil for frying
2 tablespoon madras curry paste (see recipe)
1 Tin chopped tomato
500g white fish fillets cut into large chunks
A small handful of coriander leaves
Fry the onion in a large pan with a little oil until softened.
Add the curry paste and cook for 2 minutes.
Stir in the tomatoes then simmer for 10 minutes until reduced and thickened.
Add the fish and gently simmer for 3-4 minutes until the fish is cooked through.
Scatter with coriander and serve.
