Thai Red Beef Curry

A great tasting Thai recipe

Serves 4-6 (Estimated) Rating 4 (1-5)

Prep Time 10 Minutes Cooking Time 30 Minutes

1 Onion finely chopped
5 Tablespoons Groundnut oil
4 Cloves garlic crushed
6cm Grated Root Ginger
1 Tablespoon Shrimp paste
2 Tablespoons Red Curry Paste
1kg Fillet beef steak thinly sliced
1 Can Coconut Milk
12 Whole Birds eye chillies
12 Whole Basil Leaves
1 Fresh stalk Lemon Grass
2 Tablespoons Fish Sauce
Juice of 1 Lime
Stir fry the onion in the oil on a medium heat until translucent.
Add the Garlic Ginger shrimp and red curry paste fry for 3 minutes on medium heat.
Now add the beef and seal well on all sides.
Add the coconut milk whole chillies basil leaves lemon grass and fish sauce.
Simmer for 20 minutes or until the beef is cooked.
Add the lime juice and serve.
