Chicken Bhuna

Classic recipe that has been given the SpiceTheWorld touch

Serves 4-6 (Estimated) Rating 4 (1-5)

2 Teaspoon Curry Powder
Seeds of 2 green cardamom pods
1 Teaspoon Chilli Powder
2 Green peppers de-seeded
1 Onion finely chopped
5 Tablespoons Vegetable Oil
4 Cloves Crushed Garlic
6 cm Root Ginger grated
1 Finely Chopped Cayenne Chilli
500g chicken breast cubed
2 Tablespoons tomato puree
250ml Masala Gravy (see recipe)
1 teaspoon Garam Masala
2 tomatoes quartered
5 Tablespoons whole coriander leaves
Make a paste of the curry powder cardamom pod seeds and chilli powder with a little water.
Chop the peppers into 3cm square pieces.
Fry the onion until translucent in the vegetable oil
Add the garlic ginger pepper and chilli and stir fry on medium for a further 2 minutes.
Add the curry and chilli powder paste and stir in and fry for a further 30 seconds.
Add the chicken pieces and seal well on all sides.
Add the tomato puree and masala gravy
Now cook on high heat for 20 minutes or until the chicken is cooked stirring constantly.
Add the garam masala and stir in well.
Reduce the heat and add the tomatoes stir in and cover the pan cook for 3 minutes without stirring.
Now add the whole coriander leaves stir and enjoy.
