Tofu Curry

A great tasting, vegan dish

Vegan safe Vegetarian

Vegetable oil
1 Onion, sliced
2 Teaspoon ground turmeric
2 Teaspoon curry powder
1 Broccoli head, sliced
1 Red pepper, sliced
1 Tin coconut milk
4 Teaspoon tomato puree
500 ml Vegetable stock
250g Firm fresh tofu
Add the oil to a pan and heat.
Fry the onion until browning.
Next add the turmeric and curry powder to the saucepan and fry for a further 3 minutes.
Add all other vegetables and stir in.
Now add the coconut milk, tomato puree and stock.
Finally add the tofu.
Now and cook until the vegetables are just cooked.
Serve with plain rice.
