Pumpkin Curry
Very tasty vegan recipe, if you love pumpkin this is for you
Serves - 4-6 Heat 2 (1-5)

Ingredients
330 g Pumpkin
115 g Red Lentils, rinsed and drained
6 Curry Leaves
2 tsp Curry Powder
1 Onion, finely chopped
2 cm Ginger, finely chopped
2 g Red Chillies
60 g Coconut
120 ml Soya Milk
Sea Salt, to taste
Method
Place all in pot cook until lentils are mushy (about 30 minutes).
Serve with Rice.
