| Pumpkin Curry |

| Ingredients |
| 330 g Pumpkin |
| 115 g Red Lentils, rinsed and drained |
| 6 Curry Leaves |
| 2 tsp Curry Powder |
| 1 Onion, finely chopped |
| 2 cm Ginger, finely chopped |
| 2 g Red Chillies |
| 60 g Coconut |
| 120 ml Soya Milk |
| Sea Salt, to taste |

| Method |
| Place all in pot cook until lentils are mushy (about 30 minutes). |
| Serve with Rice. |
