Banana Tofu Curry |
Tasty and oh so simple to make |

Ingredients |
400 ml Coconut Milk |
60 g Coconut |
3 tbsp Raisins |
3 tbsp Curry Powder |
1 tsp Cumin |
1 tsp Nutmeg |
2 kg Pineapple Chunks, with juice |
200 g Frozen Peas |
1 kg Chickpeas |
1 kg Straw Mushrooms, drained |
1 kg Pressed Tofu, cut into bite sized cubes |
3 Bananas, split and cut into chunks |

Method |
Place everything but the tofu and bananas into a pot over a medium-high heat |
Bring to a low boil and stir. |
Reduce heat to medium-low add tofu and bananas. |
Cook for about 5 minutes until it is all heated through. |
Serve. |
