| Banana Tofu Curry |

| Ingredients |
| 400 ml Coconut Milk |
| 60 g Coconut |
| 3 tbsp Raisins |
| 3 tbsp Curry Powder |
| 1 tsp Cumin |
| 1 tsp Nutmeg |
| 2 kg Pineapple Chunks, with juice |
| 200 g Frozen Peas |
| 1 kg Chickpeas |
| 1 kg Straw Mushrooms, drained |
| 1 kg Pressed Tofu, cut into bite sized cubes |
| 3 Bananas, split and cut into chunks |

| Method |
| Place everything but the tofu and bananas into a pot over a medium-high heat |
| Bring to a low boil and stir. |
| Reduce heat to medium-low add tofu and bananas. |
| Cook for about 5 minutes until it is all heated through. |
| Serve. |
