Tofu and Peanut Butter Curry |
A flavourful and creamy dish that is also nutrient-packed, this tofu and peanut butter curry will be a hit with your friends |

Ingredients |
3 tbsp Olive Oil |
1 Onion, finely chopped |
2 Garlic Cloves, finely chopped |
2 tbsp Ginger, finely chopped |
250 g Pressed Tofu, cut into bite sized cubes |
3 tsp Curry Powder |
150 g Broccoli Heads, broken into florets |
150 g Cauliflower, broken into florets |
750 ml Water, boiling |
4 tbsp Tomato Sauce |
2 tbsp Peanut Butter |
1 tsp Salt |

Method |
Heat up a thick-bottomed pot then add oil and chopped onion. |
Cook for 2-3 minutes. |
Now add chopped garlic and ginger. |
Cook for a minute. |
Add the tofu cubes. |
Cook for a minute. |
Add curry powder and cook for a minute. |
Add broccoli, cauliflower, and boiling water. |
Let it boil on a medium heat, until the veggies are soft. |
Add tomato sauce, peanut butter, and salt. |
Stir and let it boil for a couple of minutes, salt to taste if required. |
