| Vegan Chilli Con Carne |
| A sexy vegan chilli con carne recipe that’s hot and tasty whilst being completely healthy and nutritious. |

| Ingredients |
| 1 tbsp Olive Oil |
| 2 Onions, finely chopped |
| 2 Red Pepper, finely chopped |
| 1 Yellow Pepper, finely chopped |
| 6 Garlic Cloves, finely chopped |
| 300 g Red Kidney Beans |
| 240 g Black Eyed Beans |
| 200 g Sweetcorn |
| 800 g Chopped Tomatoes |
| 2 tbsp Paprika |
| 3 tsp Cumin |
| 2 tsp Chilli Powder |
| 3 tbsp Tomato |
| Salt, to taste |
| 15 g Dark Chocolate |
| 1 Lime |
| 1 tsp Honey |

| Method |
| Heat 1 tablespoon of oil in a large pan over a medium heat. |
| Now add the chopped onions and cook for 5 minutes. |
| Next mix in the dry spices and add a splash of water to create a paste. |
| Now add in the chopped peppers and garlic. |
| Cook for another minute. |
| Add cooked beans, sweetcorn, chopped tomato, tomato puree. |
| Next season to taste with salt and pepper. |
| Now bring to a boil, then lower the heat and leave to simmer for 30 minutes. |
| Stir occasionally to avoid sticking. |
| Take off the heat and add in the dark chocolate, lime juice and honey. |
| Serve with anything you want. |
