Vegan Chilli Con Carne |
A sexy vegan chilli con carne recipe that’s hot and tasty whilst being completely healthy and nutritious. |

Ingredients |
1 tbsp Olive Oil |
2 Onions, finely chopped |
2 Red Pepper, finely chopped |
1 Yellow Pepper, finely chopped |
6 Garlic Cloves, finely chopped |
300 g Red Kidney Beans |
240 g Black Eyed Beans |
200 g Sweetcorn |
800 g Chopped Tomatoes |
2 tbsp Paprika |
3 tsp Cumin |
2 tsp Chilli Powder |
3 tbsp Tomato |
Salt, to taste |
15 g Dark Chocolate |
1 Lime |
1 tsp Honey |

Method |
Heat 1 tablespoon of oil in a large pan over a medium heat. |
Now add the chopped onions and cook for 5 minutes. |
Next mix in the dry spices and add a splash of water to create a paste. |
Now add in the chopped peppers and garlic. |
Cook for another minute. |
Add cooked beans, sweetcorn, chopped tomato, tomato puree. |
Next season to taste with salt and pepper. |
Now bring to a boil, then lower the heat and leave to simmer for 30 minutes. |
Stir occasionally to avoid sticking. |
Take off the heat and add in the dark chocolate, lime juice and honey. |
Serve with anything you want. |
