Red Curry Paste
This SpiceTheWorld red curry paste recipe is easy to make and very tasty.

1 Shallot, chopped
1 Lemon, finely chopped
2 Red Chillies
4 Garlic Cloves
3 Cm Ginger, sliced
2 Tablespoon Tomato Purée
1 Teaspoon Ground Cumin
1 Teaspoon Coriander
½ Teaspoon White Pepper
2 Tablespoon Fish Sauce
Salt, to taste
1 Teaspoon Shrimp Paste
½ Teaspoon Sugar
3 Tablespoon Chilli Powder
3 Tablespoon Coconut Milk
2 Tablespoon Lime
Place all ingredients in a food processor or blender and whiz well to create a fragrant red curry paste.
If too thick add a little more coconut milk to help blend ingredients.
If you prefer a curry sauce rather than a paste add more coconut milk and whiz on.
