| Red Curry Paste |

| Ingredients |
| 1 Shallots, chopped |
| 1 Lemon, finely chopped |
| 2 Red Chillies, finely chopped |
| 4 Garlic Cloves, finely chopped |
| 3 cm Ginger, finely chopped |
| 2 tbsp Tomato Purée |
| 1 tsp Ground Cumin |
| 1 tsp Coriander |
| ½ tsp White Pepper |
| 2 tbsp Vegan Fish Sauce |
| Salt, to taste |
| 1 tsp Vegetarian Shrimp Paste |
| ½ tsp Sugar |
| 3 tbsp Chilli Powder |
| 3 tbsp Coconut Milk |
| 2 tbsp Lime |

| Method |
| Place all ingredients in a food processor or blender and whiz well to create a fragrant red curry paste. |
| If too thick add a little more coconut milk to help blend ingredients. |
| If you prefer a curry sauce rather than a paste add more coconut milk and whiz on. |
