Three Bean Veggie Chili

Ingredients
1 red bell pepper chopped
1 yellow bell pepper chopped
1 small white onion chopped
1 Jalapeno Pepper
2 stalks celery sliced
Vegetable oil as needed
2 cloves garlic crushed
500g Tin corn drained
1kg Tin crushed tomatoes
500g Tin pinto beans undrained
500g Tin black beans undrained
400g Tin red kidney beans undrained
2 tablespoons chili powder
1 teaspoon salt
1 teaspoon dried cilantro
1 teaspoon cumin
Black pepper to taste
Method
In large pot saute all vegetables excluding the garlic in oil until the onions start to look transparent.
Add garlic and saute together for 2 minutes.
Add all remaining ingredients and let simmer on the stove for 1 hour stirring regularly.
Server with boiled rice.
