Spicy parsnip soup

A delicious soup with a little heat. The spice infuses well with the parsnip flavour

Ingredients
2 tablespoons butter
1 medium onion, chopped
2 large parsnips, peeled and chopped into 1 cm cubes
2 clove garlic, finely chopped
750ml vegetable stock
3 teaspoons curry powder
100ml double cream
Salt and pepper
Dried chilli pepper flakes to garnish
Method
Melt the butter in a large saucepan over medium heat.
Fry the onion in butter until soft. Add the parsnips, garlic and curry powder.
Fry for a couple of minutes to release those sexy flavours.
Add the stock and bring to the boil.
Simmer for 15 minutess until parsnips are soft.
Take off the heat and whiz it up in a blender.
Stir in the cream and warm through.
Season to taste and garnish with the chilli flakes.
Serve with homemade bread.
