Red Curry Paste

This SpiceTheWorld red curry paste recipe is easy to make and very tasty.

1 shallot chopped
1 stalk fresh lemongrass minced
2 red chillies
4 cloves garlic
3cm ginger sliced
2 Tablespoon tomato puree
1 Teaspoon ground cumin
1 Teaspoon ground coriander
1/2 Teaspoon ground white pepper
2 Tablespoon fish sauce
Salt to taste
1 Teaspoon shrimp paste
1/2 Teaspoon sugar
3 Tablespoon chilli powder
3 Tablespoon thick coconut milk
2 Tablespoon fresh-squeezed lime juice
Place all ingredients in a food processor or blender and whiz well to create a fragrant red curry paste.
If too thick add a little more coconut milk to help blend ingredients.
If you prefer a curry sauce rather than a paste add more coconut milk and whiz on.
