Vegetable Curry

A quick; healthy and comforting SpiceTheWorld fix after a long hard days work.

Ingredients
1 tablespoon vegetable oil
1 onion chopped
2 cloves garlic crushed
21/2 tablespoons curry powder
21/2 tablespoons tomato puree
1 (400g) tin chopped tomatoes
300g frozen mixed vegetables
350ml vegetable stock
Salt to taste
Pepper to taste
Chopped fresh coriander to garnish
Method
Heat the oil in a pan over medium heat.
Saute the onion and garlic until golden.
Stir in curry powder and tomato puree cook for 3 minutes.
Stir in tomatoes mixed vegetables stock salt and pepper to taste.
Cook until vegetables are just done.
Adjust seasoning.
Sprinkle with fresh coriander prior to serving.
